Chickpeas are part of the legume family and are also known as garbanzo beans. They have been cultivated in Middle Eastern countries for thousands of years. With a high protein content and nutty flavour, chickpeas are an excellent addition to vegetarian dishes.
One cup of cooked chickpeas supplies approximately 15 grams of protein, 4 grams of fat and 45 grams of carbohydrates. They also offer valuable nutrients such as phosphorus, manganese, iron, copper, zinc, folate and healthy fats.
Chickpeas are high in fiber which may reduce the risk of diabetes and its nutrient profile may also help to lower blood cholesterol levels.
To prepare dried chickpeas, preferably soak beforehand for 8 hours in plenty of water. Then add the chickpeas and water to a pot at a ratio of 1:2, bring to the boil, and then simmer for about 1 hour.
