Spelt is as ancient grain and a subspecies of wheat and therefore has a
similar nutritional profile to wheat and contains gluten.

It has a more nutty flavour than wheat.  Spelt is a better source of
fibre, protein, vitamins and minerals than wheat.  It is more water
soluble than wheat so it is easier for the body to digest.

One cup of cooked spelt offers you the following: 246 calories, 51g
carbs, 7.6g fibre, 10.6 protein, 1.7g fat, manganese, phosphorus,
magnesium, zinc, iron, calcium, selenium and Vitamin B 3 and B1 and E.

Spelt flour is used in baking instead of wheat flour.
